What you are describing is more a sensitivity… like a Psychic power such as being a medium if communication of spirits in some form is being done here. Sensing energies, though isn't witchcraft in and of itself, does help quit a bit and most tend to develop some degree of sensing it as they work with it. Some people just happen to be able to sense it more easily and readily than others.
The sensing someone dying could be attached to the mediumship, as in being able to sense movement in the spirit world so noticing when someone dies… or it could be related to some pre or post cognitive ability depending on how that comes to her.
I am a sensitive and have occasional precognitive dreams as well so I get that one easily enough. And again, all this leads more to psychic abilities, helpful but not in and of itself witchcraft.
I don't want to comment on the meeting of the people parents date. Most kids have that reaction anyway. It just feels odd because it isn't the parent they are used to. That would make it very hard to distinguish between an actual sensitivity response or just a kid not liking that possibility of a new and different parental unit in the household. It would take a lot more deeper digging and journaling to figure that one out fully.
With all that in mind, there are authors out there that focus on the more psychic or internal workings that might help. It's just a matter of checking out reviews for various books on places like Amazon and then either buying the ones that suit you there or taking a list of book titles with authors and BIN# to a local bookstore if you want to support them. As for Witchcraft specifically there are a variety of different authors to check depending on if you want a specific tradition or would like to explore what's out there. The three I tend to suggest are Ronald Hutton for a start in history (Triumph of the Moon is a good start but never stop with just one), Janet and Stewart Farrar for Wicca (A Witches Bible, two books in one, that give a decent run through of what Wicca is) and Margot Murray (Drawing Down the Moon that has a slew of various types of paganism, some witchcraft, some not) to see which direction you might want to go. After that it will depend a lot on what direction you decide. Christopher Penczak has a full range of studies in his Inner/Outer Temple selection of books that can also get you started in the more practical sense.
I know that is a lot to take in so take your time and try to enjoy the learning process. We all go through a lot of hits and misses when developing our craft so understand you are not alone there.
Also look at your Psychic and Medium Abilities as a Gift… I know this will be hard to think of it that way as it can and will be Scary at times But to look at these Abilities in a Negative manner will Hurt you in the long and short run as you will be fighting yourself.. ( it will be a battle you will not be able to win either)
the best thing to do is learn to understand Ghosts will be attracted to you because they feel you will be able to help them move on
my sister has this ability too so you are not alone..
I am not sure how she is able to move ghosts to were they need to go sadly but I do hope this all helps in someway
